Could I stain the wood before assembly or would that impact the construction somehow?

It's not advisable to stain the wood prior to assembly as the moisture coming from the stain may cause severe warping. Roof beams typically can handle the stain prior but should be stained and kept to dry in a shaded area, and not exposed to sun.
