can the side window be replaced with a concession stand opening?

We don't see why not! Just remove the window panes and the middle divider, only leaving the wide rectangular window frame for an opening. Alternatively, you can move the window on the opposite wall, and make an opening for concession stand window on a solid wall, then frame it following the original window's floating structure. We'd be happy to discuss this in more detail as you're preparing for assembly.
